Which wine goes well with salmon and asparagus

Which wine to go with asparagus?

The term "asparagus wine" has become popular in recent years. But caution is advised: Most of them are with it light dry white wines of the fresh vintage meant, which one cannot exactly describe as quite expressive. These wines hardly go well with most of the asparagus recipes.

Preparation important factor

The asparagus, both the white and the green, craves characteristic wines, whereby full-bodied and also matured products increase the enjoyment of the freshly cut asparagus. Choosing the right wine category depends on how it is prepared and what makes it correct combination of asparagus and wine a complex but rewarding and enjoyable affair.

The basic rules

  • The following basic criteria can be defined for a good asparagus companion:
  • It is usually about dry white winee - full-bodied, not too light, but also not too alcoholic.
  • A wine with two or three years of maturity is preferable to a young wine.
  • The acid must not be too superficial.
  • Barrique wines are only suitable for special types of preparation, a fine wood note, for example, has proven to be a very good choice for a hollandaise sauce.

Grüner Veltliner or Grüner Silvaner

The following types of wine can be used to accompany asparagus dishes: The Grüner Veltliner in the middle category like DAC Klassik or Wachauer Federspiel is the red-white-red ideal companion - it is almost always a correct choice, ideally with a little maturity. Its counterpart as a universal companion from Germany is the Green Silvaner from Baden.

The perfect choice for asparagus comes from the Burgundy family, because in many rehearsals the Pinot Blanc (Pinot Blanc) emerged from the middle weight class as the finest supporter of the asparagus aroma, Morillon or Chardonnay also come into consideration. A real aha experience is that Pinot Gris (Pinot Gris), but this should not be too strong and show some maturity.

Sauvignon Blanc or Riesling

Of the aromatic varieties, the Sauvignon Blanc more and more popular, mature, full-bodied wines are preferable to those with spicy, grassy nuances. We are also happy to be in Austria Riesling recommended, but it is only suitable to a limited extent. Here, too, the acidity must not be too sharp, harmony is required, some residual sugar can be helpful. In general, you should avoid wines with excessive minerality.

Variety of varieties

But also rarities like those from the thermal region, Zierfandler and Rotgipfler, as Neuburger and Red Veltliner can go well with asparagus. The Viennese mixed sentence, not too strong, is also one of the asparagus secret tips.

Sweet wine and asparagus is not a common combination. In Bordeaux, when served cold, white asparagus tips are served as an amuse bouche with a slightly chilled Sauternes, which can easily be replaced with a fine selection of berries - a delicious option.
