What is black on the outside and white on the inside? Winter spread. Today it’s in a salad with mango | coriander

We have been receiving Winterretich from our farmer Arno for several weeks. Last year we tried it for the first time. Since it was almost not sold to me at the market. It was called “men's vegetables” and “for once”… I felt like I was being chopped in the pan and did the same with the radish. This then turned into an Asian salad. Voilá.

For around 10-15 starter servings

2-3 winter radishes (approx. 450g)
1/2 mango
1/2 bunch of coriander
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1 tbsp rapeseed oil
1 pinch of cinnamon powder
salt
100 ml apple juice
2 tbsp honey
1 teaspoon toasted sesame oil

Rinse or peel the winter radishes thoroughly. (You can eat the peel with it. However, it should be very clean and not have a musty smell.) Peel the mango and remove it from the stone, wash the coriander and shake it dry.

Cut or slice the radish into thin slices, then cut them in half. Cut the mango into sticks and chop the coriander.

Roast the coriander seeds, cumin seeds and fennel seeds in a pan without fat until they begin to smell aromatic and brown slightly. Remove from the pan and grind finely in a mortar.

Pour the rapeseed oil into the pan and briefly toss the spices in it. Then add the radish slices, cinnamon and salt and fry for 2 minutes. Then deglaze with apple juice, add honey and simmer for 10 minutes.

Let the radish cool, then place in a bowl with the mango and coriander and mix with the sesame oil. If necessary, season again with honey and salt.

Addendum: The highlight of this recipe was actually that we did NOT use any coriander, but the leaves of the winter radish. But it certainly also tastes good with coriander 🙂
